Organic Rice. The Rondolino family cultivates their Colombara Farm entirely by organic farming methods sowing only Carnaroli Rice. Acquerello is aged in a temperature-controlled environment then delicately transformed into millet rice using a traditional spiral screw method. Aging renders starch, proteins and vitamins less water-soluble, improving the consistency of the grains and enabling them to absorb more cooking liquid.
